In 1902 Goins published "The American Colored Waiter" followed in 1908 by a revised and enlarged second edition, retitled "The American Waiter". This 3rd revised edition adds "Part II", a large appendix to the work. Black pebbled cloth over card, title stamped in gilt onto upper cover and spine, all edges stained red, narrow 16mo size (6.5 inches tall), pp. [iv], 225, [3 - blank], 8 ads, indices, decorative endpapers, illustrated w. line drawings of table service examples and serving instructions. Volume with small scuffs and minor wear to covers, a splash to top edge stain and original price in pencil to rear paste down, else clean and unmarked throughout. Diagrams show how to properly cook and serve dishes such as Planked 'Possum à la Higgin-Bothom and a Stag dinner for 50 - both being dishes a waiter at the time might have been asked to serve. Personal hygiene is also addressed, with p. 1 recommending changing one's underwear every day during the summer and twice a week during the winter.
